Deep Fried Reese’s PB Cups

Good Morning Friends 🙂

I’m glad you liked my MN State Fair pics – I asked you to guess what this pic is:

And most people guessed Deep Fried Oreos – you were close, but these are Deep Fried Reese’s PB Cups. Here is a look at the inside:

It was glorious. And I loved that we got two, one for each of us. Some of you asked about the state of MN cardboard cutout thing: those were wine samplers!

Jason and I were at the fair for what seemed like days, but it was really only 4 hours. It was so hot and there were soooo many people there. The biggest bummer of the day? The barns were closed – CLOSED for cleaning. When we got to the fair, I wanted to eat first, then go to the barns – smelling the animal poo and then eating did not sound appetizing! Well, we got to the Cattle Barn at 2:58 and then it was announced that the barns close at 3pm for cleaning and will reopen on TUESDAY! Ugh, this happened last year (barns closed) and I checked online BEFORE leaving for the fair, and I couldn’t find any information on barns closing. It was a sad day. I did manage to snap a few pics of animals on our way out – but I never did get to see the big bunnies or chickens, or ducks, or geese, or sheep, etc. 😦 I understand they need to clean the barns, don’t get me wrong, I was just bummed that we didn’t get to go in.

We did get to see a Lumberjack contest, which was pretty cool. Axe throwing, chainsaw art, wood chopping, etc. We would have stayed longer but I felt like I was baking under the hot sun, so we got moving.

I finally went running on Saturday!!! Maybe I won’t have to walk my 10 mile race in October. It felt great to just get out there and do it – I don’t have a Garmin or any kind of gadget, but it took me about 40 minutes to run 4.5 miles.

On Monday night I did 20 min HIIT (TurboFire) and a FBB Strength workout – I love feeling so STRONG. After this 10 mile race I am definitely devoting more and more time to strength training. It makes me feel good and it makes me look good. What could be better?

For my post workout snack I had this:

Peanut Protein Ice Cream. I followed HEAB’s basic recipe and added some peanut flour (instead of cocoa flour) and some choc chips and…some red/green sprinkles. They were sitting in the cupboard just waiting for Christmas, so I cracked them open and threw some in. It was wonderful and was so cool and soothing on this (super hot!!!) MN day.

I Love My Potbelly

Hi Friends 🙂

How was your Saturday? Ours was great. As I shared with you yesterday, 8.27.07 was the day that Jason proposed – yes we celebrate almost any anniversary we can think of!

Back in August of 2007, I kept having dreams about the number 827 or $8.27 or 8.27 and it seemed like whenever I glanced at the clock it would read 8:27. Or, my purchase amount for things happened to be $8.27. I wish I was making this up, but it is true!

It was the craziest thing! Finally I mentioned it to J because it was so odd. Later he told me that the day I mentioned my 827 phenomenon was the day he picked up my engagement ring. 🙂 He took that as a sign that August 27th was THE DAY to propose.

He took me on a picnic lunch that day – and we ate Potbelly sandwiches. If you have a Potbelly near you, I sure hope you have eaten there before. Their food is AWESOME. Now, every year around 8/27 we will eat at Potbelly’s in honor of our little anniversary.

For me: Roast Beef on multigrain bread, with mustard, lettuce, tomato and hot peppers

For Jason: Turkey on white with mayo, mustard, hot peppers

Afterward we shared this:

I have no way to describe this cookie, except for this: It is the most amazing sugar cookie on the face of the earth. It tastes like cookie dough and just melts in your mouth.

And, one of the best things about Potbelly: their Hot Peppers. These babies are HOT HOT HOT. We bought a whole jar!

Thanks everyone for your nice comments yesterday. I am truly blessed to have such a wonderful, supportive husband who shows me every day how much he loves me.

Celebrating 101: Make Fruit Burritos

Hi Friends 🙂

Thank you everyone for your comments yesterday! Although I wish no one had to deal with lack of self-esteem or self-worth (or my Holly Monster as I referred to it yesterday) – it is somewhat comforting to know that I am not alone in those feelings.

What helps me is taking care of myself. When I am eating well, exercising consistently and getting plenty of rest each night I feel better about myself. My goal this week (and every week!) is to keep those three points in focus. When I take care of myself I feel better about myself. Sounds easy, and yet I have such a hard time doing all three at once. I know I am just too hard on myself and expect perfection.

Ok, enough of this sad blogging! Moving on…

I was reading Angela’s blog yesterday and saw her amazing creation: Easy Apple Pie Burritos. They looked delicious! I had to give them a try. Check ‘em out:

I followed the basic recipe, with the exception of using oat flour instead of spelt flour. I also made half of my pies with apples, and the rest with blueberries.

The crust was very crumbly, but it tasted great and it tasted just like sugary pie crust! Thanks Angela for yet another wonderful recipe!

That is a picture of Jason on our wedding day! You can tell he was pretty excited about it! Yep, 3 years ago yesterday was the day that Jason proposed. I thought we deserved a little treat in order to celebrate. Here’s my favorite engagement pic:

The Holly Monster

If you read my post yesterday, you saw that I wrote nice things about myself. And when I wrote it I honestly meant it. I do see myself as beautiful and as a lovely person. But yesterday, you know what happened? I reread my post at around lunchtime and I didn’t believe it.

I read it and thought “why am I lying to myself and others? I don’t feel that way about myself, I never have and never will”. This I am calling the Holly Monster, because it has basically eaten up and destroyed my feelings, relationships and (what feels like) life in general. I let the HM come into my head and it tells me that I’m ugly or boring or not good enough or dumb or fat or lazy or a million other horrible things. The HM has gotten in the way of past relationships, friendships, jobs, doing well in classes, etc. You name the situation, it has gotten in the way.

The HM (or bad self esteem, bad self image, whatever you want to call it) ruled my head, my attitude, my life. And to be honest, it sometimes still does. I call it a monster because, well, it is. It terrorizes me and in a way, holds me hostage and keeps me from doing things that I want to do. I am a work in progress and I find that my HM shows itself less and less, but it is still there.

I used to want to start a blog AFTER I have this all figured out. After I am happy with my body and how I look and how I act and what I say and do. But you know what? If anything, having this blog has helped me get closer to that inner peace – but I know I have a ways to go.

Have you ever struggled with a poor body image/poor self esteem/[your name here] monster? Do you still struggle?

So, the summary would be this: I hope to one day be at peace with myself, but I am not there. I am starting to see myself as a beautiful, valuable person, but the HM still rears its ugly head at times.

I thought maybe a Monster Breakfast this morning would help me feel better – makes sense, right?

I took Katie’s Oat Smash and Gina’s Breakfast Cookie turned it into the Monster Oat Smash Breakfast Cookie Extravaganza.

My name is Holly and I am The Couch Potato Athlete. After years of not liking my body, myself, my anything, I am finally on the road to having a better attitude about myself. I have been constantly consumed with negative thoughts about myself, and lately I have been replacing those negative thoughts with positive ones. What has helped me the most: Other healthy living blogs. I love hearing about others on the same journey as me (or about those who have completed their journey!) I always had in my head that you had to act a certain way, eat a certain way and exercise a certain way to be the “ideal” — through blogs I can see more into the lives of real people, and I can simply see that there is no one-size-fits-all when it comes to healthy living. I need to find what works for me and not just copy what other people do.  My husband tells me every day that I am beautiful – now is the time for ME to believe this! I am strong, I am beautiful, I am worthy, I am a loyal friend, I am a hard worker, I am amazing.

Let Me Eat Cake!

Happy Hump Day 🙂

Last night’s dinner was so simple and yet so delicious:

Whole wheat pasta, marinara sauce, fire roasted tomatoes, Garlic Gold and shrimp. It was so easy and tasted wonderful. But what was even better was dessert…

On Monday Gina posted about a microwave cake and it seemed so easy and looked great. So I tried it myself, but with a few changes. I used peanut flour since I didn’t have any cacao powder, and I threw in a few choc chips.

Peanut butter cake with chocolate chips! It was freakin fantastic 🙂 Thanks Gina.

Have you ever had a garage sale? Any ideas on how to tackle this monstrosity?

I have been collecting garage sale stuff for months now, but I cannot bring myself to go through it all and sort it. We had a sale last year and got rid of a lot, but I just can’t motivate myself to do it again this year. Look at some of our treasures:

Questions:

1. Have you ever had a garage sale? Been to one? Do you have any tips/suggestions for me? Last year I had everything sorted together: dishes/kitchen on one table, clothes on another, candles/household goods together, holiday, etc. I also priced everything clearly and made larger signs – all clothes 25 cents a piece, books 50 cents, etc.

2. What is the craziest exercise fad that you have ever heard about? I don’t know if Oxysize was ever a fad… I’d have to say the Shake Weight is ridiculous!
