Banana Cashew Eggroll

Happy Friday Friends!

Yes – the title of this post is true. Near the end you will see the glorious Banana Cashew Eggroll. It was magnificent!

I had a wonderful birthday yesterday! Thanks for all the well wishes! The day was great and it started with a bouquet of flowers delivered to me at work:

(the card reads “from your loving husband”) – aaaaaaawwwww.

8 hours of work felt like 500 because I wanted to get out of there so badly. After listening to a few voicemails at lunch time and in the afternoon (thank you to everyone who left me those lovely messages!) I was more than ready to go home. Once 4:30pm rolled around I left work, came home and changed and then we were off to dinner.

Jason and I had only eaten here once, but it was so good and we couldn’t remember why we hadn’t gone back. We started with some veggie potstickers:

And some delicious cocktails. I had a Gin and Ginger (ginger ale, gin, lime) and Jason had the Effen Passion (passion fruit juice, vodka, ginger ale):

They were so refreshing — the ginger taste was so strong. Yum! For dinner, I ordered a chicken/veggie stir-fry with a lemon sweet/sour sauce:

The vegetables were so fresh and crisp and the sauce was light and flavorful. Jason got the teriyaki chicken fried rice:

And now the moment you’ve been waiting for: The Banana Cashew Egg Roll

“rolled by hand – crispy, with fresh banana, roasted cashew, brown sugar filling, served with creamy chocolate sauce”

Oh man – I didn’t think we’d ever find a dessert that even comes CLOSE to the Nutella Burger in Vegas – but this was BETTER! The banana + cashew flavor was amazing. I need to make this at home. After dinner we went to the theater and saw Tangled

It was so cute!!! I loved it. See the little green chameleon on the guy’s head? He was my favorite character! Too adorable. And Mandy Moore’s voice is perfect for Rapunzel. We loved it!

Hopefully this weekend I’ll make enough time to learn how to use my birthday gift:

Wunderbar Hemp Protein

Hi Friends 🙂

I spent a few hours with my mom yesterday – and one of the things she said was “is it just me or is time just flying?” And isn’t that true? I swear the past few months have gone by so quickly – and before we know it Thanksgiving will be here and then soon after 2011 will be here! It is truly amazing how fast time seems to be going. Makes me want to focus on enjoying each day!

I started Sunday with a Pumpkin Smoothie:

Instead of my normal protein powder, I used this Hemp Protein sent to me from Manitoba Harvest.

They were kind enough to send me some other samples to try:

Along with some Hemp Seed Butter – which I will be trying later this week.

I spent the afternoon with my mom putting together some party favors for her job. She works for an Assisted Living Facility as their Activities Director, and this Wednesday is their Oktoberfest Party. Check out the wunderbar favors (they are little bags of pretzels)

Cute, huh? I had time to help her because Jason was gone for most of the afternoon. He is currently back in school (along with working full time). His school is undergoing some sort of accreditation program and he was asked to be interviewed by the accreditation evaluators. Basically he gets interviewed for an hour and gets free dinner 🙂

But he sure looked nice for the interview, right?

I put those roses there – I’m such a good photographer, right? You better be shaking your head “yes”…

I didn’t get super far on our Halloween costumes, but by the middle of the week I should have some good pics for you 🙂

*Do you enjoy crafty stuff like putting party favors together or scrapbooking? I love crafts and I’d probably enjoy scrapbooking, but some of that stuff is super expensive – all the papers, stamps, stickers, tools, etc. I’d rather use my money for something else!

Baseball & Beer

Hi Friends 🙂

Are you having a good weekend? This morning Jason and I are running the Twin Cities 10 Mile race — yes I broke up with running a few weeks ago, but I had already paid for the race and thought I’d give it a go. It should be a fun race without any pressure to have a great race time.

On Saturday we went to the MN Twins game:

The new ballfield (Target Field) is so beautiful. (Much better than the Metrodome, don’t you think so MN friends?)

But it was super cold and windy in our section:

I thought about bringing my Snuggie, but I settled for a fleece blanket instead. The game was exciting (we won!!!). We brought Jason’s Grandma and his Aunt and they sat frozen with us had a great time as well!

As part of our carb loading for our race, we enjoyed a beer:

2. Are you a beer or a wine drinker? What is your favorite drink? I don’t drink much beer, although a Blue Moon or Corona is good once in a while. I prefer mixed drinks: Captain/coke or Vodka/Lemonade. Very rarely will I have wine!

3. Tell me something completely random about yourself. I’ll go first: I’ve gotten drunk twice at a police station. I’ll explain more tomorrow 🙂

We had such a busy weekend — I am actually looking forward to going to work this morning! I miss my daily routine. 😦

Wendy, you were kind enough to remember that J and I went to a wedding reception on Saturday — I did not take photos because I really don’t know the bride/groom too well (bride is J’s coworker) — and it was a pretty laid back affair. But they had good food and plenty of music 🙂

Yesterday J and I went to a bbq/outdoor party and were asked to bring a dish to share. Usually I bring veggies or a salad (or something I can eat in case everything is not lookin good) — but I wanted to bring some sort of dessert instead. I decided to make a Fruit Pizza. I used a Pillsbury recipe and it turned out fabulous:

It was a big hit at the party 🙂

After we left, J and I stopped at this place:

We did find one treasure from Treasure City to bring home:

They fit right in with Big Mac and Mayor McCheese!!! And for only $10, how could we not buy them?

Thursday night J and I had date night. We have a super busy weekend and needed some time to relax and rewind. We had a gift card to TGIFriday’s and went to use it up!

I got the Caribbean Chicken with extra veggies:

J got the Captain Morgan Caribbean Conga-Line Chicken Sandwich (with huge pieces of avocado and sweet potato fries)

Same thing we got last time. This Captain Morgan rum glaze is seriously the best! Afterward I ran to the Redbox (are these a local thing? A vending machine for movies?) and was hoping to find The Lovely Bones (I just finished the book last week and still need to see the movie) but it wasn’t there. Instead, I picked up this:

I think we’ll watch it tonight. We’ve picked out such awful movies lately (The Professional — older movie with Natalie Portman and then recently Legion — horrible movie with Dennis Quaid). They were both pretty awful. Lets hope Kickass isn’t super lame.

I finished Thursday night with a haircut (just a trim). Am I the only one who loves the feel of someone else brushing your hair? I think it is so calming. I also soaked in our jacuzzi tub and read more Sookie. I think it is so important to spend some time on yourself every day. I need the relaxation! I try not to treat myself with food, so I do little things like taking a bath, reading my book, taking a walk, painting my nails, buying myself something expensive small. 🙂

Here’s our crazy weekend:

Saturday: Farmers Market, drive 2 hours to J’s family reunion, drive 2 hours to friend’s wedding, drive 2 hours home (ugh!)
Sunday: Drive 3 hours to BBQ/Picnic, then drive 3 hours home (ugh!)

So much time in the car. I am not looking forward to that!

Me Time

Good Morning!

Thank you so much for all of the great comments yesterday. Yes, I am still working on figuring out my blog voice and I know that with time it will get easier!

Sad news. I was planning on working out with Billy Blanks today, but the dvd did not work. 😦

I was so upset – I have been looking forward to it all day. He’s going to have to get switched out for a new disk at Target. For those of you who asked, yes, this is a new workout from Billy Blanks — this is not his old school 1980s version! (even though I like those vhs tapes dvds too!)

This thing is awesome and I have been drinking so much water lately! I like that it has a straw — so I can safely drink (water only!) while driving, and not have to worry about tipping the bottle up and not being able to see the road. Anyone else know what I’m talking about here?

Last night I did get some Me Time, er, should I say Mii Time?

I did some hula hooping, step aerobics, balance games, etc. I love the hula hooping the most. No I don’t consider this “real” exercise – as in I don’t get much of a calorie burn, but it is movement and part of a “healthy active lifestyle”, no?

Pure trash. I love it. I watched the first episode of True Blood and didn’t like it. But now that I’m almost through with the Sookie Stackhouse books, I might give the show another shot. I know the books/show are very different, but I’m more interested in the characters now.

I love taking the time each day to relax, whether it is with a book, sitting in the tub, watching some mindless television (um, did anyone else watch Dating in the Dark Monday night? I did!), calling a friend/family member, reading blogs, etc. I think I would go nuts without a little “me time” each day. What do you do for “me time”?

Garlic Taters

Good Morning,

I decided to take Sunday off of blogging. My sister L, niece F and nephew H left today. It is so sad not having them here! Just when I was getting used to their sleeping and eating schedules and living here all week – they have to go back to Oklahoma. The only upside to them leaving is the lack of cheerios all over kitchen floor…

Thanks for the comments on Sat and Sun about getting rid of an all-or-nothing attitude. I hope to one day have the “gray” attitude some of you talked about. I really like Tina’s attitude about a healthy balance – some days I see her having donuts for breakfast, but then balancing that with a nice big veggie filled lunch and dinner. For me, if I start the day with donuts for breakfast, I’ll end up with a bagel/cream cheese for lunch and McDonalds for dinner! That is not a balanced day!

With my sister here last week, she did some cooking for us. 🙂 It is always nice to have someone else cook, dontcha think? On Sunday morning she made these wonderful roasted fingerling potatoes that we picked up at the Farmers Market on Saturday.

She started by roasting a head of garlic Saturday night, and letting the garlic cool in the fridge overnight. Then, on Sunday morning she washed and sliced the potatoes, rubbed them with oil and sprinkled them with salt and pepper. While the potatoes roasted in the oven, she mashed the roasted garlic and mixed it with a stick of butter. (Paula Deen would be so proud!) After the potatoes were done roasting, she put dabs of the garlic butter all over the potatoes, then put them back in the oven. When the butter is melted, the potatoes are done.


What made the potatoes so great (in addition to having someone else make them for me) was the oil. It wasn’t just any-plain-ole-oil – it was Garlic Gold Oil. The folks at Garlic Gold were kind enough to send me some Garlic Gold products to test out. I got some original Garlic Gold:

Garlic Gold Oil, Garlic Gold Meyer Lemon Vinaigrette:

And 4 different crispy, crunchy Garlic Gold Nuggets. Regular, Parmesan, Italian Herb and Sea Salt.

These products are all organic and the possibilities are endless! I can see myself using these products almost every day. They would work great with roasted veggies, salads (according to the packaging they are a great alternative to bacon bits!), pasta, pizza, fish filets, chicken breasts, making garlic bread, anything. I used the Garlic Gold Oil and Parmesan Nuggets on my Kale Chips:

 My workouts have been all over the place today. For some reason TurboFire didn’t sound good to me, so I did 2 new workouts from Women’s Health magazine: a kettlebell workout (that I did with a 10 lb. dumbbell instead) and a short yoga routine. It felt great to do something different. This week my focus turns to running – I need to prepare for my 10 mile run in October, but for some reason I bought this at Target today:

I am a sucker for Billy Blanks dvds! I find his dvds to be so motivating because he seems to know just what to say to make me push myself even harder. He really seems like he cares!

10 Things & 2 Treats

Good Morning!

First of all, sorry I have not had a chance to comment on many blogs this week – I have family in town staying with us. But next week I will be back 100% commenting and posting. Thanks for understanding!

Last week Michelle challenged me to write 10 random things about myself. Here they are:

10 Random Things About Me

1. I can wiggle my ears.
2. I’ve worn glasses since the 2nd grade. My first pair was purple with pink diamonds in the corners.
3. I got my first cell phone in 2007. Yep, I lived that long without one!
4. I am terrified of swimming in lakes, the ocean and most swimming pools. When I took swimming lessons as a child, I would throw myself on the floor, kick, scream, anything to avoid jumping into the deep end. I was terrified! (and still am sometimes!)
5. I got kicked out of a basketball game in the 6th grade for bad sportsmanship. The ref called me for traveling (I think) and I got mad and pounded the ball in the court and it bounced all over the place. I stomped around and got kicked out.
6. I’ve been tazed. Yes, with a real tazer by a real police officer. I was a volunteer for a demonstration. Maybe I’ll post the video in the future 🙂
7. When I was young I wanted to own a B & B. I still do, most days.
8. My first job was scooping up poop at a petting zoo. The owner would scream at kids, parents and his employees. I didn’t last long there. The worst was llama poop. Don’t ask.
9. My favorite meal is a Big Mac, french fries and coke. Yes, this is true.
10. I always straighten the ketchup, mustard, salt/pepper shakers at restaurants. It is a habit and one that J likes to point out often. 🙂

I took the day off of work yesterday to go swimming (in a 4 foot pool, so not scary for me!) with my sister L, niece F and nephew H. It was so much fun!. They live in Oklahoma and are up here in Minnesota for the rest of the week. I love having those kids around.

Last night I was busy making little treats: Pecan Babies.  (treat #1!)I took Megan’s idea and made some with almonds – Almond Babies!!! (treat #2!!!) The basic idea is to mimic the Larabar flavor – with dates, nuts and sea salt. They turned out great! Thanks Megan for the idea:

They kept sticking to the outside of the cup, so I kept scraping them down and grinding them more:

Finally I flattened the dough out on a plate:

I threw them in the fridge to harden overnight, and then I rolled them into balls:

They turned out a little crumbly (I will add less nuts next time). But they were still delicious! You can’t go wrong with only a few ingredients — and the flavor was exactly like the Pecan Pie Larabars!
