I got in a great workout last night, I did some FBB strength training and some TurboFire HIIT – I love when I feel my blood pumping!

Katie’s post really influenced my decision to do more strength/weight training. I love cardio, but I really want to be STRONG. Thanks Katie for the push in the right direction!

I made a really simple lunch today. My sister L made it for me when she was visiting last week. We picked out some lovely beets at the Farmers Market. I boiled them up, let them cool a bit and then peeled and sliced them. My hands didn’t get too pink from the beets:

I added some goat cheese and dressed the salad with this:

Who could not love Paul Newman dressing? Ok, who could not love anything with Paul Newman’s face on it? Then I sprinkled the salad with some walnuts, and ta da:

I’m going to add this to a bed of greens, but it looks so purty on its own!

A Zubaz Tutorial and Zucchini Chips

Good Morning!
There were a few comments about not knowing what Zubaz are? Maybe it is a regional thing (MN thing?), I’m not sure. Here is a Zubaz advertisement:

Zubaz are athletic pants with crazy zebra stripes in odd colors. They were really popular 15-20 years ago? Everyone in my school had them and recently they’ve been popping up again. Honestly, Google Zubaz for more information. You won’t be disappointed!
I was really dragging all day Monday, I think lack of sleep and not working out on Sunday kind of slowed me down. Do you get that way when you skip a workout? Exercise gives me so much energy and when I take unplanned days off it kind of throws my whole week off. But Monday night I got my TurboFire workout in and holy cow do I feel better now! I did Fire 45 – which has 3 fire drills (HIIT drills) that really get my heart pumping. I felt great afterward.
Dinner was the always popular tilapia and green beans. I pan fried the tilapia with a little bit of butter, salt and pepper. But the green beans were the star of the show.
Remember these babies from Saturday?

Yep, I got these precious treasures from the Farmers Market and I couldn’t wait to roast them up with some garlic sea salt, pepper and canola oil. They turned out great.

Afterward, while I was packing my lunch (boring Minestrone soup w/extra kidney and black beans added and a small salad) I decided I needed something more. So I went through my Farmers Market produce again and pulled one of these guys out:
I figured my kale chips turned out well, so why not try zucchini chips? I found some recipes online, and combined a bunch of them.
Zucchini Chips
Combine in a small bowl: ¼ cup crumbled bread crumbs ( I used a toasted piece of Ezekial bread), ¼ tsp seasoned salt, ¼ tsp salt, 1/8 tsp black pepper. Put 2 tbsp almond milk (or milk of your choice) in another small bowl. Chop up your zucchini into thin slices.
Dip the zucchini into the milk and then into the bread crumb mixture:
Place chips on an oven safe wire rack (a basic cookie sheet might work fine too). Bake for 30 minutes at 425 degrees.
I also made some chips seasoned with only salt, pepper and rubbed with canola oil. Before the bake:

Delicious. The perfect addition to my lunch! This morning they shriveled up even more and were much more crunchy.

Question of the day: What is your favorite, easy meal to make for dunner? I love making chicken breasts/veggies or fish/roasted veggies. They are both quick and easy, and we eat that 2-3 times per week!

Carrot Fries

Look who helped me with dinner:

Perfect for a Coach Potato Athlete, huh? I love this little guy. He helped me make Carrot Fries.

They turned out great! I love sweet potato fries, but I have a hard time finding good sweet potatoes this time of year. I’ve heard of using carrots before, so I wanted to give it a try.

Carrot Fries

Preheat oven to 400 degrees.

Peel, wash and cut carrots (about 2 lbs worth) into 4 inch slices. Cut them down to the size of a regular fry.

Toss carrots with 1-2 tsp of canola oil in a large bowl.

Place foil or parchment paper on a baking sheet. Line up your carrot sticks and sprinkle with sea salt.

Place in oven and bake for 20-25 minutes.

So delicious! J thought they tasted BETTER than sweet potato fries.

Tonight the plan is to relax, read and get to bed early. I already got my TurboFire HIIT workout in, and now it is time to dig into The Lovely Bones.

The Beauty of Blogs

Today I finished the TurboFire HIIT 15 minute workout. I know, 15 minutes sounds short, but this is pretty intense. I followed it up with a 30 minute sculpting routine and I am feeling good now!
 
My afternoon snack was a MIM. (Muffin in a Minute!) I saw the idea today on The Art of Kaztronomy 

I used the original recipe, except I used ground chia meal instead of flax meal.

 It tasted very much like a bran muffin — would be good with some PB spread on top!
 
After TurboFire I made dinner.  
 
Dinner: Chicken/pasta/veg with a side of green beans (Thank you Trader Joes!)

Tomorrow night J is taking me to Inception – have you seen it? I’ve heard it is really good but kind of confusing? I need to make sure I pay attention!
 
I was thinking today about what I want my blog to become, and I realized I need to just go with the flow. Every day I think of something new to write about, or a new tab I want to add to my menu of options. I need to just take it day by day and enjoy the ride! I am already overwhelmed with the amount of comments and emails I have already received and I cannot wait to see where this goes.
 
I first started reading food/healthy living blogs about 4-5 months ago. I stumbled upon a few healthy living blogs. These women were all strong, fit and healthy. I found it motivating to read about their lives, their exercise and food habits and I started implementing changes in my own life.
 
I had recently lost some weight with Weight Watchers, but I never really knew much about food. What is healthy? What is unhealthy? How much is too much? How much is too little? Seeing photographs of food and reading why certain foods are good for you truly helped me gain a better understanding of what I should be eating throughout the day. I was training for my marathon at the time and I was clueless about what to eat and how to fuel my body. I learned a lot from the blogs and I hope readers learn from my blog as well!
 
So do we really need another food/healthy living blog? Of course! The more ideas and motivation we get from blogs, the better off we will all be. Another reason I loved reading blogs is because they detailed accounts of actual people. Look at the beauty you can find in food and in feeling healthy. Today I read Live Laugh Eat  which had beautiful pictures of a dragonfruit – who knew they were so beautiful?!

I’m working on my workout dvd reviews, they should be up later tonight!
