Kitchen Sink Chili

Did you have a nice weekend? Were you a lucky attendee of Foodbuzz? I loved reading the recaps and wish I could have tasted all of that wonderful FOOD! But I think our vacation to Las Vegas (this weekend!!!) totally makes up for not going, right?

Speaking of our Vegas trip, we really haven’t planned much. I’m hoping we find some time tonight or tomorrow to figure out what restaurants we really want to try, shows we might want to see, etc. I like to plan things ahead of time and it is driving me nuts that we don’t have this trip figured out yet. Are you a planner or do you like to go with the flow?

Yesterday I spent quite a bit of time cleaning up the house — vacuuming, changing sheets, laundry, cleaning toilets (ugh), cleaning the stove, microwave, etc. I took advantage of the “extra” hour from Daylight Savings Time. After that I met my mom for aΒ walk, and then I finished up the day helping Jason’s mom (Hi Deb!)Β with some yard work.

I came home to a crockpot full of this:

My favorite chili. Basically throw whatever you have on hand and throw it in the crockpot. I used a few stalks of chopped celery, chopped carrots, 2 cans kidney beans, 1 lb browned ground beef, 2 cans V8, some salt, pepper and a heaping tablespoon of chili powder. I had my chili with a side of cornbread:

These babies are huge in the world of Weight Watchers. I remember going to my meetings and hearing people RAVE about them. I never tried them — $5 for a box of 4 at my grocery store. No thanks. But for 100 calories, these things aren’t too bad. The ingredient list isn’t the best and I’d rather have real cornbread, but the taste isn’t too bad. Kind of “fake” tasting though. I didn’t like that the second ingredient is sugar…

Good thing these muffins need to be stored in the freezer. I think it is going to take us a long time to get through the whole box.

    I have tried vitatops and will only buy them on sale! Those suckers are expensive.

    I’d say my favorite flavor was cranbran! I like the nonchocolately ones best!

    I’ve never tried vitatops, but I have heard people rave about them. Maybe I’ll try ’em one day… in no hurry πŸ™‚

    I made a huge pot of chili last night, too! And ours was a similar everything-in-the-fridge version πŸ™‚ I made cornbread muffins to go along with it–basic tasty recipe I found on (they had 1/4 cup of honey in them, which was a sweet but good addition!).

    My favorite muffins are a tie between pumpkin walnut and blueberry crumb πŸ™‚

    Have fun planning your Vegas trip! I’m a crazy planner when it comes to vacations, but my husband is definitely more of the laid back, go-with-the-flow kind of guy!

    that chili looks real good. i bought vitamuffins a few times, on the rare occasion they went on sale – i love them. you can give them all to your bro πŸ™‚
    in my opinion vegas was really fun because we had no plans. that was why the east coast vaca with the whole family back when leah was prego with flora ended up being not fun for everyone (i had fun, mom!), because it was too over-planned. vegas is better not to plan i think. that was the best part – just picking casinos we were going to visit that day and walk around and visit them. we got to see more that way, and it really felt like vacation because it was so go with the flowy.

      I’m sure they’ll still be in my freezer at Christmas time. I don’t want to overplan it, but I want an idea of what we’re going to do each day. We’ll probably just try to figure it out on the plane ride.

    I am totally a planner… our trip to Vegas, we knew this time we wanted to eat at great restaurants and visit the spa every day… many of those restaurants are ones that I’ve been wanting to try (out of all that we tried, I would suggest you go to B&B Ristorante – Mario Batali & Joe Bastianich – FABULOUS!) and I had a list and an ORDER I wanted to visit them in… πŸ˜€

    You will have a great time – I cannot wait to hear all about it !!

    My favorite muffins are so easy to make. You take a box of cake/muffin mix, 1/4 cup of egg substitute and 1 can of pumpkin and mix it all together. It is extremely tasty!

    The highlight of my weekend was a food truck festival here in Austin! So much fun to see all the variety gathered in one place.

    I wish my highlight had been chili and cornbread, though. πŸ™‚

    My favorite muffin recipe is top secret, but it’s mine. [Is that narcissistic?] Pumpkin chocolate chip muffins….it’s the only thing I’ve ever been paid to make.

    I love VitaTops but totally agree that I wish the ingredient list was shorter. It’s kind of crazy how many they give you in that box though!!

    I am SUCH a planner. I think it would do me good to have a trip where everything isn’t planned out. It’s so hard though. And yea, a Vegas trip totally makes up for it. I now have FoodBuzz on my list of want to attend conferences next year. I’m thinking of doing that instead of BlogHer.

    My favorite muffin: probably a tie between blueberry and lemon poppyseed. Come think of it, I really should just combine the two. Adding poppyseeds and lemon juice to grocery list…

    I tired Vitatops years ago when my stepmom was doing Weight Watchers. I remember loving the blueberry ones. Countdown to your weekend in Vegas – so exciting!

    I have yet to try a vitatop but I want to soo bad because I really love, love muffins!

    Chili is the best..truly the best and the more stuff you put in it, the better it is!

    I tried Vita Tops a few years ago, but I’m not a huge fan of them…they are nice though for quick sides/treats!
    Your chili sounds amazing! I have yet to make chili this year, but I need to very very soon!

    Hi Holly,

    How exciting that you are going to Las Vegas this weekend. There are so many options there with entertainment and dining that you will be fine without planning ahead. But if you want to watch shows, you might want to reserve your tickets prior to arriving in Vegas.

    The highlight of my weekend was Foodbuzz in San Fran and also spending time with my friends and our trip to Napa πŸ™‚

    Umm yes. Beyond. Trust me. Vegas, WITH your husband, traveling TOGETHER, being together, that’s how i will spend my vacay time and free $$…traveling WITH my family. I will not be going on any more solo trips for a veryyyyyy long time. Meeting people I don’t know IRL. I want to spend those precious times w/ Scott & Skylar.

    Love the chili. Kitchen sink is where it’s at for me too!

    Vegas: Cirque’s Mystere or O. Get tickets. Now. Pay as much as you can to have as best of seats that you can afford. It will be worth it, trust me. I wouldnt tell you to splurge on that unless it was truly worth it. It is, for me at least πŸ™‚

    Restaurants …unless you have a burning desire for a specific restaurant, you will be able to get in somewhere that will likely suit your needs, without a problem. Dont try to get into the current Hot Spot at 8p on a Fri nite without a reservation type of thing tho πŸ™‚

    Oh what a prize! I like the Deep chocolate vitamuffins – but they go in like 2 bites – so flaky like, and the price is crazy!! But, a good mix-in with yogurt.

    Go with the flow! Life is too short to plan!…just don’t end up on the rooftop of a hotel wondering where your friends are…(“the Hangover…:) ).

    Have fun in Vegas!!! I am a total planner but when I went there, I just went with it. There is so much to do, there’s no way you’ll get bored. And I didn’t even gamble.

    Vegas is going to be awesome!!! I am a 50/50 person. My husband likes to plan every second out, and I hate it…I need SOME down time. But I do like to have shows and some nice dinners planned! If you can get there DEFINITELY go to Joes Stone Crab…best meal we ever had in our lives!!!

    Never had Vita tops, but was tempted to buy them the other day when I shopped hungry πŸ˜‰

    I like Vitatops every once in awhile, but those suckers are pricey! My grocery store sometimes has 2 for $6 sales, so I buy a couple boxes when that comes around. I usually stick to chocolate…and add vanilla ice cream on top!

    i used to be a planner, but my husband is the opposite and i guess he’s rubbed off on me. when we went to New Zealand we really had no idea what we were doing, but still had an amazing time. you should go to Tom Colicchio’s restaurant while in Vegas!!

    best part of my weekend was touring wineries in Marlborough. only now, i’ll be working off those calories for the next few weeks. sigh…it’s a hard life… πŸ˜›

    Oh yippie! Las Vegas is absolutely awesome. I’m very much a planner but we went to Vegas without any set plans either. Luckily you don’t really need them there. You can just wander around, and there are a ton of shows to see.

    The only thing we planned in advance was that I ordered the Beatles LOVE Cirque du Soleil show because that was my #1 priority when I visited Las Vegas. We tried to see a second Cirque du Soleil show once we were there called “O” but they were sold out.

    I usually do all the planning, but my fiance is a go-with-the-flow kind of person. I’ll usually plan the itinerary when we go, and he just follows along.

    Have a wonderful trip! Can’t wait to hear all about it.

    I love the Vitatop products! I had their brownie and didn’t really care for it–but I actually had the cornbread for the first time Sunday (I posted about it … but it’s buried …) and really loved them! But it’s not for everyone. I think the ingredient list is pretty good considering it’s 100 cal item. Usually they have scary ingredients and I shy away. If you split a big box from their website online, it’s a little cheaper, for those that really like them. I do that with my co-worker sometimes so we don’t have too many, pay less and save on shipping.
